Tasting Note
Black cherry, raspberry, crushed strawberry, rose and sous-bois with ink, bay and mineral notes. Pure, structured palate with fine ripe tannins, vibrant acidity and a long saline, soil-driven finish. Youthful but ageworthy.
Food Pairing
Roast duck, beef Bourguignon, lamb, mushroom risotto, aged Comté or Gruyère; Asian: Peking duck, char siu, miso-glazed black cod, braised short ribs (Korean-style).
Production Method
Hand‑harvested, sorted and largely de‑stemmed; cool pre-fermentation maceration followed by indigenous-yeast fermentation and 18–24 months ageing in oak (Chambertin parcels frequently in a high proportion of new oak); bottled largely unfiltered.
Vineyard Info
