Vivid cherry, raspberry and wild berry fruit with forest-floor, peony, cedar, spice and dark chocolate notes; velvety texture, bright acidity, fine chalky tannins and a long mineral finish.

Roast duck, beef bourguignon, lamb rack, mushroom risotto; Asian: Peking duck, char siu, miso-glazed salmon, mushroom ramen, Korean BBQ (bulgogi).
Production Method
Hand-harvested Pinot Noir (majority destemmed), fermentation in open stainless-steel vats with regular pigeage/pumping-overs, malolactic in barrel and élevage in French oak (significant new oak in 2017).

Domaine Armand Rousseau (Père et Fils) is a historic Gevrey-Chambertin family domaine, major owner in Chambertin (~2.5 ha) now managed by the Rousseau family across generations including Cyrielle Rousseau. Known for low yields, old vines and traditional Burgundian vinification.
