Tasting Note
Perfumed rose and red-cherry fruit with tar, tobacco, licorice and sweet spice. Medium–full palate, ripe dark cherry and raspberry, fine firm tannins, bright acidity and a long, savory, mineral-tinged finish.
Food Pairing
Western: braised beef, osso buco, truffle or mushroom risotto, aged Parmigiano-Reggiano, roasted lamb. Asian: Peking duck, Korean BBQ (galbi), miso-glazed black cod, spicy Sichuan beef, char siu with steamed buns.
Production Method
Hand-harvested Nebbiolo; traditional fermentation with extended maceration; aged approximately 26 months in large Slavonian oak casks (estate uses some French oak across range) and bottle-aged before release.
