Tasting Note

Deep dark ruby; concentrated blackcurrant, blackberry and raspberry with violets, tobacco, ink and subtle cedar. Juicy, voluminous palate with polished, ripe tannins, bright acidity and long, persistent finish.


Food Pairing

Western: grilled ribeye, roast lamb, mushroom pappardelle, aged cheeses, dark chocolate. Asian: Korean BBQ (bulgogi/galbi), beef rendang, char siu, Peking duck, spicy Sichuan beef.


Production Method

Destemmed fermentation in stainless steel; matured ~18 months in French oak (≈75% new). Bottled January 2021.
