Tasting Note
Deep cherry-red. Concentrated black and red fruit (blackberry, plum), toasted coffee/toffee, mineral and spice notes; fleshy, powerful, fresh with sweet, polished tannins and long finish.
Food Pairing
Western: roasted lamb, grilled ribeye, venison, aged Manchego, mushroom ragù. Asian: Peking duck, Korean BBQ (bulgogi/galbi), char siu or hoisin-glazed pork, braised beef with soy/ginger (Chinese-style).
Production Method
Hand-harvest from 60–100-year-old bush vines; small stainless-steel fermentations, gentle basket-pressing, aged ~24 months in new French oak barrels.
