Tasting Note
Perfumed and mineral: blackberries, wild plum, violets, crushed cloves and slate. Medium–full body, fine/grainy tannins, bright acidity and a long, energetic, mineral finish.

Food Pairing
Western: roast lamb, grilled beef, game, mushroom ragout, charcuterie, hearty stews. Asian: Korean BBQ, char siu (Cantonese roast pork), Peking duck, spicy Sichuan beef, miso-glazed dishes, umami mushroom stir-fries.

Production Method
Hand-harvested old vines; indigenous-yeast fermentation in oak vats; 14–16 months ageing in large foudres and old oak casks; bottled without fining or filtration.
