Tasting Note
Deep ruby with plum, blackberry, black cherry, kirsch, potpourri, ground pepper, smoked meats and exotic spice. Medium–full body, seamless texture, bright acidity, fine-grain tannins and a long, spicy finish.
Food Pairing
Western: roasted lamb, duck confit, charcuterie, mushroom ragu, grilled pork. Asian: Korean BBQ (bulgogi), Peking duck, char siu, Sichuan pepper beef, spicy miso ramen.
Production Method
Approximately 65% whole-cluster fermentation; aged ~21 months in 50% new French barrique and 600L demi-muids and 50% used French oak; bottled without fining or filtration.
