Tasting Note

Aromas of blackberry, black cherry, violets and pencil lead; concentrated, velvety palate with graphite/mineral lines, fine powdery tannins, spice and a long saline finish. (50 words max).


Food Pairing

Roasted lamb, rib‑eye, beef short ribs, mushroom risotto, aged cheddar; Asian: Peking duck, char siu, Korean BBQ ribs, braised beef with soy/ginger, Cantonese roasted meats.


Production Method

Cool ferment (≈20–23°C); part élevage in large wooden foudres (notably for Cabernet Franc), remainder in new French oak; ~18 months aging. Gentle extraction, reductive élevage to preserve freshness.
