Tasting Note
Deep ruby with concentrated blackcurrant, blackberry and raspberry, plus cocoa, coffee, tobacco, licricice, rose petal and white pepper. Plush, velvety tannins, bright freshness and an exceptionally long toasted-oak finish.
Food Pairing
Western: grilled Florentine steak, roast lamb, aged Parmesan, braised short ribs. Asian: Peking duck, Korean BBQ (bulgogi), char siu, rich miso-glazed dishes.
Production Method
Fermented in truncated cone-shaped vats; malolactic in barriques; aged ~18 months in new French oak barriques, then blended and further barrel-rest before bottling.
