Roasted lamb, game and braised beef; aged Sardinian pecorino and mature cheeses; Asian: Peking duck, Korean BBQ, char siu, spicy Sichuan beef or braised pork.


Production Method

Hand-harvested native varieties, separate fermentations, maceration ~16–18 days, aged 18–24 months in French oak barriques then additional bottle aging.
