Tasting Note

Intense black-cherry and plum fruit with Mediterranean herbs, leather, tobacco and exotic spice; concentrated, velvety texture, fine-grained tannins and a long, persistent, slightly tarry finish.


Food Pairing

Roasted lamb, wild boar ragout, braised beef, aged Pecorino; Asian pairings: Korean BBQ (galbi), Chinese red-braised beef, Japanese yakiniku, rich Szechuan-style dishes.


Production Method

Careful grape selection; fermentation at 28–32°C with 16–18 day maceration using delestage; aged 18–24 months in new French barriques, followed by bottle ageing.
