Crisp lemon and white pear with white flowers, blanched almond, toasted brioche and saline minerality. Medium-full, precise texture with bright acidity and a long, racy finish.
Food Pairing
Western: roasted chicken, lobster with beurre blanc, creamy mushroom pasta, soft cheeses (Brie, Camembert). Asian: sushi/nigiri, tempura prawns, miso-glazed black cod, lightly spiced Thai coconut seafood curry.
Production Method
Hand-harvested, whole-cluster pressing; native-yeast fermentation; aged ~11–12 months in oak (max ~15–20% new) then several months in stainless steel. Bottled without fining or filtration; organic/biodynamic practices in the vineyard.
