Tasting Note
Deep garnet with exuberant black and red cherries, cassis, raspberry pie, spice, cigar box and dusty soil. Full-bodied, firmly textured, spicy mid-palate and a long, perfumed finish.

Food Pairing
Grilled ribeye, roast lamb, braised short ribs, aged cheddar; Asian: Peking duck, beef bulgogi/Korean BBQ, char siu pork, Sichuan-style braised beef.

Production Method
Hand-harvested Bordeaux-style blend; fermentations in oak and tank with extended maceration (several weeks) and aging in French oak barrels to integrate fruit and tannin.
