Tasting Note

Concentrated yet elegant: blackberry, cassis, violet and rose petal with crushed limestone minerality, fine spicy oak and a menthol/licorice lift. Medium-full-bodied with silky tannins and a long, mineral finish.


Food Pairing

Roast lamb, aged beef, venison, pâté, Comté or aged cheddar; Asian: Peking duck, char siu, braised beef short ribs, mushroom hot pot, Korean BBQ (galbi).


Production Method

Hand-harvested, fermented in oak vats and small lots; matured in 100% new oak barrels (≈20 months) with low yields for intense concentration.
