Tasting Note

Inky, concentrated black currant and blackberry with plum, violet, graphite and truffle; layered new oak spice, velvety yet firm tannins, vibrant acidity and a long, mineral-driven finish.

Western: roast lamb, aged beef, game birds, mature hard cheeses. Asian: Peking duck, char siu, soy-braised beef, mushroom hot pot, rich Cantonese roast meats.


Production Method

Fermented and macerated in temperature-controlled wooden vats; aged about 20 months in 100% new French oak; small-lot selection and low yields.
