Tasting Note
Perfumed violets and rose petals with wild blueberry, raspberry, pomegranate, graphite, crushed stone and spice. Medium-full, bright acidity, ultra-refined tannins and a saline, mineral finish—very long and precise.

Western: roast lamb, beef rib roast, duck breast, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu or soy-glazed pork belly, Korean BBQ (bulgogi), mushroom and soy stir-fry, miso-marinated dishes.
Production Method
Hand-harvested; fermentations in wooden vats with delestage; matured ~20 months in mostly new French oak (casks from Taransaud/Demptos); low yields and limestone quarry cellars.
