Tasting Note
Concentrated, mineral-driven Chardonnay: citrus peel, white peach, oyster shell and wet limestone with saline/marine notes, taut acidity and a precise, long, austere finish.

Western: lobster/seafood (scallops, lobster thermidor), roast chicken with herbs, creamy mushroom risotto, beurre blanc fish. Asian: miso‑glazed black cod, delicate sushi/nigiri (fatty tuna), steamed fish with ginger & scallion, Cantonese dim sum.
Production Method
Hand-harvested; whole-bunch pressing, native-yeast fermentations; élevage in 350L demi-muids (one- and two-year-old) with no new oak in 2022; ~12 months in barrel plus further time in tank.
