Tasting Note
Mineral-driven Chardonnay: flinty chalk, white peach and apricot, citrus (grapefruit, lime) with white flowers, subtle toasted spice and saline, precise acidity. Concentrated, elegant and long, age-worthy.

Western: roast chicken, butter-poached lobster, grilled sea bass, creamy mushroom pasta, aged Comté. Asian: miso-glazed black cod, sashimi/sushi, steamed white fish with ginger & scallion, delicate Thai coconut curries.
Production Method
Hand-harvested fruit; indigenous yeasts; fermentation and élevage in 350L barrels (≈20% new) for ~12 months, followed by ~6 months in tank; minimal bâtonnage.
