Tasting Note
Perfumed red: wild cherry, raspberry, plum, violet and spice, with licorice and chalky mineral notes. Silky texture, supple tannins, vibrant acidity and a long, savory finish.

Roast duck, beef fillet with thyme jus, game terrine, mushroom risotto; aged cheeses (Epoisses, Saint-Nectaire); Asian: duck breast tataki with ponzu, soy-miso glazed salmon, beef tataki or seared tuna with sesame-soy.

Production Method
Hand-harvested; fully destemmed; fermentation in wooden vats with indigenous yeasts; aged 16–18 months in small oak barrels (≈25–30% new); bottled without fining or filtration.
