Tasting Note
Inky black-fruit core of blackberry, cassis and black cherry with violet, mint, sage, cedar, vanilla and dark chocolate. Full-bodied, concentrated, with silky 'Rutherford Dust' tannins and a long earthy, spice-tinged finish.
Food Pairing
Western: grilled ribeye, braised short ribs, roasted lamb, aged cheddar. Asian: Korean BBQ (bulgogi), Cantonese char siu, Sichuan pepper beef, Peking duck.
Production Method
Hand-harvested, fermented and aged ~22 months (majority in new French oak); small-plot blending of Cabernet with Petit Verdot and Malbec; traditional barrel maturation.
