Tasting Note
Concentrated black currant, blackberry paste and dark cherry with graphite, sage, leather, espresso and dark chocolate. Violet and licorice lift the aromatics; densely textured, full-bodied palate with polished 'Rutherford dust' tannins and a long, cocoa-tinged finish.
Food Pairing
Western: grilled ribeye, dry-aged côte de boeuf, roast lamb, braised short ribs, aged cheddar. Asian: Peking duck, Korean BBQ (galbi), Szechuan beef, char siu (Cantonese BBQ pork).
Production Method
Hand-harvested and optically sorted fruit; portion barrel-fermented in new French oak, remainder fermented in stainless steel and concrete; malolactic in barrel; aged ~22 months in 95% new French oak.
