Tasting Note
Opaque ruby with smoke, licorice, new oak and black-fruit aromas. Medium–full body, sweet entry, ripe plum/cassis flavors and silky tannins; finish is moderate rather than very long.
Food Pairing
Western: roast lamb, braised beef, duck confit, aged hard cheeses. Asian: Peking duck, char siu or hoisin-glazed pork, beef rendang, grilled shiitake/soy-marinated dishes.
Production Method
Traditional right-bank vinification: cold maceration, stainless-steel fermentation (partial whole-cluster), malolactic fermentation and ~16–20 months ageing in French oak barrels (small component in amphorae).
