Tasting Note
Perfumed red and black fruits (raspberry, cherry, blackberry) with rose-petal and violet florals, graphite/mineral undertone, subtle spice and vanilla from oak; silky texture, polished tannins and a long, chalky mineral finish.

Western: roast lamb, beef tenderloin, duck confit, mushroom risotto, aged comté or cheddar. Asian: Peking duck, char siu (BBQ pork), soy-braised short ribs, Korean BBQ bulgogi, rich Chinese hotpot (beef).
Production Method
Hand-harvested; intra-parcel fermentation with gentle maceration; matured 12–14 months in French oak (c.56–58% new) before bottling.
