Tasting Note

Opulent, ink and black-fruit aromas with truffle and lead-pencil notes. Full-bodied, dense and velvety with ripe blackberry, cherry, sweet spice and well-framed tannins; long, concentrated finish.


Food Pairing

Western: grilled ribeye, roast lamb, braised short ribs, mushroom risotto. Asian: Peking duck, Cantonese roast pork (char siu), Korean BBQ (bulgogi), beef and black bean stir-fry, mushroom hot pot.


Production Method

Hand-harvested, very low yields; ~7-week maceration, malolactic in barrels; aged ~24 months in 100% new French oak; bottled unfined and unfiltered.

Tiny ~2–2.5 ha estate on the limestone plateau, acquired by Gérard Perse (Vignobles Perse) in 2001; tiny production (~300–450 cases) and intensive viticulture adjacent to Pavie-Decesse.
