Hand-harvested fruit from multiple Puligny parcels; organic/sustainable viticulture. Slow whole-cluster pressing, native-yeast fermentation in a mix of 228L barrels and larger foudres, ~12 months in oak and ~18 months total élevage; minimal filtration.
