Tasting Note
Inky, full-bodied Cabernet with concentrated blackcurrant, blackberry, black cherry, graphite and cedar. Notes of licorice, dark chocolate and menthol, with polished oak and silky, ripe tannins leading to a long, layered finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), char siu, Peking duck, spicy Sichuan beef.
Production Method
Grapes from estate and selected Napa parcels were fermented and blended; aged ~20 months in ~82% new French oak before bottling. Small-lot vinification and extended élevage for structure and ageability.
