Tasting Note
Perfumed and energetic Sangiovese: wild cherry, raspberry, rose petal, sweet spices, licorice and saline-mineral notes. Refined yet powerful with layered red fruit, fine ripe tannins and a long, savory finish.

Western: grilled or roast lamb, bistecca alla fiorentina (T-bone), mushroom risotto, aged pecorino or Parmigiano. Asian: Peking duck, char siu (barbecue pork), Korean BBQ (galbi), Sichuan-style beef, teriyaki-grilled beef.
Production Method
Hand-harvested old-vine fruit; triple selection. Native-yeast fermentation in open-top barriques with daily punchdowns; ~2 weeks ferment + 1 week maceration. Malolactic in oak; aged ~18–20 months in French oak barrels before final blending.

Made by Bibi Graetz (based in Fiesole, Florence). Colore is sourced from very old vineyards (Lamole, Vincigliata, Olmo, Siena/Poggio Matto) and created as the estate’s flagship since 2000, celebrating his 20th anniversary in 2019.
