Tasting Note
Perfumed and floral (violets) with red cherry, raspberry and plum fruit, fine silky tannins, mineral undertones and a long, elegant, saline finish. Balanced and refined with bright acidity.

Food Pairing
Western: roast lamb, grilled ribeye, mushroom risotto, aged Manchego. Asian: Peking duck, Korean BBQ (bulgogi), char siu, Sichuan-style braised beef.

Production Method
Hand-harvested; native-yeast fermentation in large open oak vats; aged 14–16 months in large foudres; biodynamic/respectful viticulture.
