Tasting Note

Plush black cherry and redcurrant with violets, pine-needle and savory herb notes. Silky, medium–full body, fine dusty tannins, chalky minerality and cocoa on a long, elegant finish.


Food Pairing

Western: roast leg of lamb, ribeye, beef short ribs, aged cheddar. Asian: Peking duck, char siu, Korean BBQ short ribs, Sichuan-style beef, braised beef noodle dishes.


Production Method

Hand-harvested, small-lot fermentations; aged in French oak (nearly two years, high% new oak historically) and typically bottled unfined/unfiltered.
