Tasting Note

Deep black-fruit core of cassis, black cherry and boysenberry with violet, graphite, dark chocolate, roasted herbs and subtle cedar. Full-bodied with fine‑grained dusty tannins, bright acidity and mineral-volcanic notes, finishing long, savory and cocoa-tinged.


Food Pairing

Western: grilled ribeye, roasted lamb, braised short ribs, aged cheddar and hard cheeses. Asian: Korean BBQ (galbi), Wagyu yakiniku or steak, Cantonese roast duck, Sichuan-style beef, char siu.


Production Method

Hand-harvested, small‑lot fermentations with malolactic conversion; matured in French oak (estimated 18–28 months, ~40–60% new) before bottling.
