Tasting Note

Deep purple; aromas of cassis, blackberry, wild sage, graphite and truffle. Full-bodied, tightly wound palate with concentrated black fruit, savory spice, refined grainy tannins and a long mineral finish.

Western: grilled ribeye, roasted lamb, braised short ribs, mushroom risotto, aged hard cheeses. Asian: Korean BBQ (galbi), beef bulgogi, char siu (Cantonese roast pork), Peking duck with hoisin, miso-marinated dishes.


Production Method

Hand-harvested fruit from an 11-acre terraced site; small-lot fermentation with extended maceration and aging in French oak barrels (Bond typically uses new French oak).
