Tasting Note
Inky ruby with cassis, blackberry, dark chocolate, blueberry and cedar. Silky, concentrated fruit framed by cocoa and vanilla oak; firm but polished tannins and a long, graphite-tinged finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (bulgogi), Cantonese char siu, soy-braised beef, spicy Sichuan beef, miso-marinated dishes.
Production Method
Sourced from small Napa vineyards, low yields; fermented in small lots, aged 22 months in 80% new French oak; bottled unfiltered and unfined.
