Tasting Note
Dense blackberry, black cherry and cassis with clove, blackstrap licorice, dark soy and smoked‑meat notes; powerful, plush palate with silky, fine tannins and a long, spiced finish.

Roast lamb, braised beef short ribs, venison, aged cheddar and other hard cheeses; Asian pairings: char siu, Korean BBQ, Sichuan beef, beef rendang, rich mushroom or soy‑glazed dishes.

Production Method
100% Shiraz; fermented and matured ~5 years in French oak hogsheads with rigorous barrel selection (final blend from best barrels); ~10% new oak.
