Tasting Note
Medium-to-full-bodied St-Estèphe: blackcurrant, blackberry, violet, graphite, tobacco and cedar with dusty gravel minerality; polished texture, ripe but present tannins and a persistent, savory finish.

Food Pairing
Roast lamb, beef short ribs, steak au poivre, beef bourguignon; Asian: Korean BBQ (galbi), Peking duck, char siu, beef rendang; mature cheeses and mushroom dishes.

Production Method
Hand-harvested, sorted; temperature-controlled stainless-steel fermentation with 18–21 day maceration; aged 18–20 months in new oak (100% new barrels); fined with egg white.

Vineyard Info
Château Calon-Ségur, a 3ème Cru Classé (1855) estate in Saint-Estèphe (≈55 ha). Purchased by Suravenir (2012); consulting oenologist Éric Boissenot; noted for gravelly soils and long ageing potential.
