Tasting Note
Blackcurrant and plum with cedar, tobacco, bay leaf and spice. Medium-bodied with velvety tannins, fresh acidity and a long, elegant finish showing subtle iron/mineral notes.

Western: roast lamb, grilled or braised beef, duck, aged cheeses (cheddar, comté). Asian: Peking duck, char siu, Korean BBQ short ribs, soy-braised beef, mushroom hot pot or umami-rich stir-fries.
Production Method
Hand-harvested, plot-by-plot vinification in stainless steel and wooden vats; maceration and malolactic fermentation; ~15–18 months ageing in oak (mainly previously used barrels for the second wine).
