Floral and exuberant with crushed red/black berries, licorice, black tea and stony minerality; silky, fine tannins and a long, precise finish.

Food Pairing
Grilled ribeye, roasted lamb, chimichurri, empanadas, aged cheeses; Asian: Korean BBQ (bulgogi/galbi), char siu, Szechuan beef, miso-glazed vegetables, yakitori.

Production Method
Fermented in 225L oak barrels and 500L French-oak roll-fermenters with wild yeasts; 10–15 day maceration, max temp 25–30°C; aged ~20 months in French oak.
