Tasting Note
Perfumed violets, blackberries and black olive with wet-stone minerality, chalky yet silky tannins and bright, persistent acidity. Elegant, concentrated and long with saline-mineral finish.

Production Method
Cold pre-fermentation maceration (≈5–10 days; 50% whole-cluster), fermentation in 225L barrels and 500L French oak roll-fermentors, wild yeasts; ~20 months in 1–2 year French oak.
