Tasting Note
Floral and mineral-driven: rosehip, lavender, crushed plum and blackberry with mountain herbs and wet-stone minerality. Silky, fine tannins, bright acidity and a lean, pinot-like midpalate leading to a long, elegant finish.
Food Pairing
Western: grilled ribeye, roast lamb, venison, mushroom risotto, aged manchego. Asian: Korean BBQ, Sichuan-style beef, char siu, miso-glazed salmon, yakitori or spicy lamb skewers.
Production Method
Cold maceration with ~50% whole clusters, fermentation in concrete/stainless and some oak vessels, élevage in large foudres and French oak (1–2 year) for ~16–21 months; wild yeasts used.
