Tasting Note
Floral and herbal (lavender, chamomile, sage) with crushed plum, blackberries and wet-stone minerality; pinot-like freshness, silky fine tannins, bright acidity and a long, mineral finish.

Food Pairing
Western: grilled lamb, roast beef, braised short ribs, mushroom risotto, aged cheese. Asian: Korean BBQ (galbi), soy-glazed short ribs, char siu, spicy Sichuan beef, grilled lamb with chimichurri. Strong with umami and moderately spicy dishes.

Production Method
~100% Malbec; ~50% whole-cluster, cold maceration (5–10 days at <10°C), fermentation 12–22 days; élevage ~16 months in 500–2000L French foudres and concrete vats, native yeasts.
