Tasting Note
Herb- and floral-driven: thyme, lavender and lemongrass with green apple and citrus, saline minerality, subtle cedar/vanilla. Creamy mid-palate, razor-sharp vibrant acidity and a long, saline, herbaceous finish.

Cold settling; fermentation in French oak (500L foudres/used barrels) with wild yeasts; partial malolactic, bâtonnage; aged 12–16 months in 2nd–4th use French oak; unfined and unfiltered.
