Tasting Note
Fragrant blackberry and blueberry with raspberry brightness, licorice, coffee, chocolate and floral lift. Medium-full body, fine-grained dusty tannins, lively acidity and long, savory finish.

Food Pairing
Western: grilled ribeye, lamb chops, roasted game, mushroom risotto, aged cheddar. Asian: Korean BBQ, char siu, Sichuan-style beef, teriyaki beef, miso-glazed eggplant, yakitori.

Production Method
20% whole-cluster, 80% whole-berry. 100% barrel fermentation in new French oak (225–500L) for ~30 days using indigenous yeasts; alcoholic and malolactic fermentation and 18 months aging in French oak.
