Tasting Note
Perfumed Nebbiolo: ripe cherry, rose and violet florals, licorice, tobacco and truffle; concentrated yet refined with silky tannins, bright acidity and a very long mineral finish.

Food Pairing
Western: filet mignon, braised short ribs, roasted game (venison), aged alpine cheeses. Asian: Peking duck, char siu, Korean bulgogi, Sichuan-style braised beef.

Production Method
Hand-harvested Nebbiolo; grapes destemmed and fermented with indigenous yeasts in stainless steel, followed by malolactic fermentation and extended ageing in large oak casks (with limited barrique influence); Ceretto uses organic/biodynamic practices.

Bricco Rocche is a Ceretto monopole in Castiglione Falletto (~1–1.5 ha) at 350–370m on sand/silt/clay soils. Ceretto is a historic Piedmont estate (est. 1930) focused on single-cru Barolos.
