Tasting Note
Perfumed Nebbiolo: rose petal, red cherry and raspberry, blood orange, licorice, tar and cedar. Silky yet firm tannins, bright acidity and a long, savory, slightly saline finish.
Food Pairing
Western: roast beef, braised short ribs, mushroom risotto, truffle pasta, aged pecorino or Parmigiano. Asian: Peking duck, char siu (Cantonese roast pork), Korean BBQ (bulgogi/galbi), rich mushroom or bone-marrow hotpot.
Production Method
Hand-harvested Nebbiolo; stainless-steel fermentation; ~9 months in 300L French oak (≈10% new), ~18 months in large Austrian oak casks; 12 months bottle age. Estate organic/biodynamic practices.

Monopole Bricco Rocche (≈1.4–1.5 ha) in Castiglione Falletto on sandstone soils at 350–370 m. Ceretto family estate since 1982; biodynamic/organic conversion from 2015 onward.
