Tasting Note
Elegant Nebbiolo with rose, lavender, red cherry, raspberry and spice aromas. Silky yet powerful palate of red and dark fruit, tobacco, licorice and mineral undertones, framed by fine-grained, persistent tannins and a long, racy finish.
Food Pairing
Western: braised beef, roast lamb, venison, osso buco, aged cheeses (Parmigiano-Reggiano). Asian: Peking duck, char siu, beef rendang, miso-glazed dishes, mushroom hot pot.
Production Method
Hand-harvested; indigenous-yeast fermentation in stainless steel with long maceration; aged ~24 months in tonneaux and large oak casks, followed by at least 12–24 months bottle aging.
