Tasting Note
Ripe red cherry and raspberry, bitter orange peel, dried rose, cedar, leather and forest floor. Bright acidity, firm silky tannins, saline minerality and concentrated core with a long, savory finish.

Western: roasted beef, braised short ribs, truffle dishes, aged Piedmont cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), rich braised beef curry and mushroom hot pot.
Production Method
Organic/biodynamic viticulture; spontaneous fermentation with 10–15 days maceration; malolactic in wood; aged ~30 months (mix of 300L barrels and large botti, ~10% new oak), followed by bottle aging.

Ceretto, family estate founded 1937 in Alba; major Langhe producer managing ~120 ha. Bussia bottling comes from a small Soprana parcel (~0.7 ha) rented and farmed organically/biodynamically.
