Tasting Note
Perfumed Nebbiolo: sour cherry, wild raspberry, dried rose and orange peel with tar, truffle, tobacco and tea. Silky but gripping tannins, bright acidity, medium-full body and a long, savory finish.

Western: braised beef, roast lamb, mushroom and truffle pasta, aged cheeses (Parmigiano, Pecorino), game. Asian: Peking duck, char siu, Korean bulgogi, milder mapo tofu, shiitake mushroom hot pot, soy-braised short ribs.
Production Method
Hand-harvested Nebbiolo; traditional red fermentation with extended maceration. Aged ~24 months in oak (large casks/tonneaux and selected barriques), lightly fined/filtered prior to bottling.
Vineyard Info
Ceretto family estate (Alba), established early 20th century; produces single-vineyard Barolos including Prapò (approx. 2.4 ha) located between Baudana and Serralunga d'Alba. Estate moved much production to organic practices in recent years.
