Tasting Note
Perfumed Nebbiolo: rose petals, blood orange, sour cherry, dried herbs, tar and mineral notes. Very concentrated, with intense, muscular tannins, bright acidity and a long, slightly drying finish.
Food Pairing
Western: roasted ribeye, braised short ribs, truffle risotto, aged Parmigiano-Reggiano, mushroom dishes. Asian: Peking duck, Korean BBQ (galbi), soy-braised beef, umami mushroom hotpot. Rich, savory and umami-forward foods work best.
Production Method
Hand-harvested Nebbiolo; 12–16 days maceration in temperature-controlled stainless steel; aged in large French oak casks (1,600L) and some 400L Allier barrels for ~24–36 months, then bottle aging.

From Ceretto’s Prapò cru in Serralunga d’Alba (c. 2.4 ha owned by Ceretto). South–SE exposure, 270–380m altitude, Lequio soils high in silt and clay; vines planted in the 1970s. Ceretto is a historic Langhe estate founded in 1930.
