Tasting Note
Deep black cherry, plum and blackberry fruit with notes of cedar, tobacco, spice and dark chocolate. Silky texture, fine-grained tannins, balanced acidity and a long, spicy finish.
Food Pairing
Western: roast lamb, ribeye steak, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean bulgogi, lamb rendang or dry-style Sichuan beef.
Production Method
Hand-harvested, destemmed, fermented in temperature-controlled vats, malolactic conversion followed by aging in French oak barrels (partially new) for ~12–18 months.
