Awards/Ratings
early vintages received high praise from critics (Antonio Galloni/Vinous noted Bussolo’s Barolos)
Tasting Note
Perfumed red cherry, dried rose, licorice, orange peel and tobacco; bright acidity, fine-grained but persistent tannins, stony minerality and a long savory finish.
Food Pairing
Western: braised beef, ossobuco, roast lamb, aged Parmigiano and mushroom risotto. Asian: Peking duck, Cantonese char siu, Korean BBQ (bulgogi/galbi), rich mushroom or beef hot pot.
Production Method
Hand-harvested Nebbiolo; spontaneous/native yeast fermentation, extended maceration, malolactic in tank; ~24 months ageing in oak (mix of barriques/tonneaux, limited new wood), minimal filtration.
Vineyard Info
Produced by Cesare Bussolo (La Morra native, long-time Roberto Voerzio collaborator). Fossati is a single-cru site farmed with very low yields, high-density planting and organic/minimal-intervention practices; small production.
