Tasting Note
Dense black cherry, blackberry and dark-plum fruit with violet, cocoa, graphite and wild-herb (thyme/sage) nuances; very silky texture, powerful mineral core, building noble tannins and a long, savory finish.

Roast or braised red meats (beef Wellington, short ribs), game, mushroom risotto, aged Comté; Asian: Peking duck, char siu, miso-glazed salmon, Korean bulgogi or soy-braised beef.

Production Method
Old-vines Pinot Noir, partly whole-cluster fermentation, élevage in French oak barrels (significant new oak), bottled without fining/filtration; estate practices include organic/low-intervention viticulture.
